Caprese Cucumber Snack Bites

Ingredients

  • ½ cucumber sliced (usually 8-10 slices)
  • 2 tbsp hummus
  • 5 cherry tomatoes halved
  • 1 oz mozzarella cheese cut into small pieces
  • 1-2 tbsp basil leaves roughly chopped
  • ½-1 tbsp balsamic glaze

Instructions

  • Slice cucumber about ½" thick and lay flat. You can leave the skin on or partially peel them depending on your preference.
  • Top each cucumber slice with hummus, one halved cherry tomato, mozzarella cheese, and basil leaves. Drizzle balsamic glaze over the top of the cucumber bites.

Notes

You can layer the ingredients anyway that you feel works best.
