In a small bowl, toss peach slices with maple syrup, lemon juice and cinnamon.
Heat butter in a nonstick skillet over medium heat. Pour the peach mixture into the pan. Sauté for about 6 minutes, stirring occasionally, or until caramelized. Remove from heat.
Add cottage cheese to a bowl and top with caramelized peaches. Optionally, add pepitas on top. Enjoy!

Ripe summer peaches work best for this recipe. If your peaches aren’t ripe yet, you can speed up the ripening process by placing them in a closed paper bag on your counter. Alternatively, you can use canned peaches in place of fresh peaches - just decrease the cooking time since canned peaches are typically already softer than fresh peaches.Swap cottage cheese out and substitute with Greek yogurt or ricotta cheese.To make this dairy-free, substitute olive oil for butter and substitute cottage cheese for a Greek style non-dairy yogurt or a plant based yogurt with extra protein.This dish is best enjoyed immediately.
