Southwest Chicken Crockpot Recipe

This easy Southwest Chicken Crockpot recipe is perfect for busy weeknights or meal prep. Packed with protein, fiber, and flavor, it comes together with just five simple ingredients and a few minutes of prep.

Ingredients

  • 1 ½ lb chicken breast boneless, skinless
  • 1 can black beans drained and rinsed
  • 1 can corn drained and rinsed
  • 1 cup salsa
  • 2-3 tbsp taco seasoning or use 1 packet taco seasoning

Instructions

  • Add all ingredients to a slow cooker and cook on high for 2-3 hours or on low for 4-6 hours.
  • Using two forks, shred the chicken before serving.
  • Serve as tacos, quesadillas, in a rice bowl or on top of a salad. Add desired toppings such as cheddar cheese, sour cream, plain Greek yogurt, avocado, guacamole, jalapenos, pico de gallo, or cilantro.

Notes

Instead of a taco seasoning packet, you can substitute a homemade taco seasoning mixture of:
  • 1 tbsp chili powder
  • 2 tsp ground cumin
  • 1 tsp paprika
  • 1 tsp black pepper
  • ¾ tsp salt
  • ½ tsp garlic powder
  • ½ tsp onion powder
  • ½ tsp oregano
  • ⅛ tsp red pepper flakes (optional)
 
Serve this southwest chicken with tacos, quesadillas, in a grain bowl, or on top of a salad.
