Add all ingredients to a blender (or use an immersion blender). Blend on high for about 60 seconds or until smooth and there's no longer any cottage cheese curds left.
Transfer to a bowl and cover with plastic wrap. Place in the fridge and allow to set for at least 1 hour.
Divide mixture into two servings and top with your favorite toppings. Enjoy!
