Easy Cottage Cheese Chocolate Pudding (4-Ingredients)

This tasty cottage cheese chocolate pudding is high protein but tastes just like the creamy chocolate pudding you’re used to! Plus, it only takes 4 simple ingredients to whip this up!

Why You’ll Love This Cottage Cheese Chocolate Pudding

If you’re not a fan of cottage cheese, the idea of it in your chocolate pudding may be offputting. But trust me, this healthy dessert doesn’t taste anything like cottage cheese! Here’s why you’re going to love it. 

  • High Protein: since it uses cottage cheese as the base, it’s naturally high in protein. In fact, one cup of cottage cheese will provide you with 25 grams of protein. Protein is a vital macronutrient that can keep your blood sugar levels more stable and keep you feeling full for longer periods of time. It also has the ability to alter our hunger and fullness hormones, which may help if you have weight loss goals. 

  • Gut Healthy: cottage cheese also contains beneficial probiotics that can improve gut health. A diverse gut microbiome is being linked to a lower risk of many chronic diseases, so it’s always a good idea to get more fermented foods into your diet.

  • Satisfies your sweet tooth: this high protein chocolate mousse will help satisfy your sweet tooth while providing your body with some extra nutrients.

  • Stable blood sugar levels: with a little fiber and 13 grams of protein, this satisfying snack will keep blood sugar levels more stable and keep you feeling full for longer.

Ingredients You’ll Need

  • Cottage cheese: the secret ingredient that nobody would have suspected. Full fat cottage cheese works best here to give it a creamy texture, but you could substitute a fat free cottage cheese too if you prefer. 

  • Cocoa: you’ll want to use unsweetened cocoa powder to give it that chocolate flavor that we’re looking for. 

  • Honey: adds natural sweetness for this chocolate cottage cheese pudding recipe. If you don’t have honey on hand or want a substitution, maple syrup, agave syrup, or monk fruit sweetener would also work well!

  • Vanilla extract: this adds a different flavor dimension to the recipe but could easily be omitted if you prefer not to include it.

How To Make Cottage Cheese Chocolate Pudding

Another reason you’ll love this recipe is that it’s so simple to make! You’ll never need another pudding mix package again. 

To make this, you’re first going to put all of the ingredients into a high speed blender or food processor. Blend on high for about 60 seconds or until everything is well combined and smooth. 

I have an older blender which wasn’t able to quite get all of the cottage cheese chunks out, so I ended up using my immersion blender to get the smooth consistency I was after. 

Next, put the chocolate mixture into a bowl and cover with plastic wrap. Place in the fridge and let it set for at least one hour. 

How To Serve It

Add your cottage cheese chocolate pudding to a bowl and top with your favorite toppings. Some of my favorites are fresh whipped cream, fresh berries, chocolate shavings, a drizzle of peanut butter, or dark chocolate chips.

How To Store It

Store leftovers in an airtight container in the fridge for 3 to 4 days. I don’t recommend freezing this recipe. 

Variations & Substitutions

  • No cottage cheese? Plain greek yogurt is a good high protein substitute!
  • Swap out the honey for maple syrup, monk fruit sweetener, agave syrup, or any sweetener you like. 
  • Want a more decadent dessert? Alternate adding layers of the chocolate pudding and whipped topping to a parfait glass.
  • Add your favorite toppings such as fresh fruit, whipped topping, chocolate chips or chocolate shavings.

This creamy chocolate pudding combines the chocolate flavors you love with cottage cheese to provide a high protein dessert.

Ingredients

  • 1 cup cottage cheese full-fat preferred
  • 2 tbsp cocoa powder unsweetened
  • 2 tbsp honey
  • ½ tsp vanilla extract

Instructions

  • Add all ingredients to a blender (or use an immersion blender). Blend on high for about 60 seconds or until smooth and there's no longer any cottage cheese curds left.
  • Transfer to a bowl and cover with plastic wrap. Place in the fridge and allow to set for at least 1 hour.
  • Divide mixture into two servings and top with your favorite toppings. Enjoy!

    This tastes just like regular chocolate pudding! My husband had NO IDEA it had cottage cheese in it until I told him. I’ll definitely be making this again.
