  • Honey: Adds natural sweetness without overpowering the other flavors. You can adjust the amount based on your taste or swap it for maple syrup if preferred.

  • Vanilla extract: A splash of vanilla rounds out the flavor and complements the strawberries and chocolate. Use pure vanilla extract like this one for the best taste.

  • Fresh strawberries: Strawberries create a naturally sweet, fiber-rich bottom layer. They’re loaded with antioxidants and provide texture, color, and a dose of vitamin C.

  • Peanut butter: Peanut butter adds healthy fats and plant-based protein to balance the snack. If you’re using natural peanut butter, you may not need to melt it. However, if it’s too thick, a quick microwave warm-up helps it spread easily.

  • Dark chocolate chips or chunks: Dark chocolate adds richness and a satisfying snap once frozen. It’s also a source of antioxidants. I love this one, or for a no sugar added option, this one is always one of my favorite options.

  • Coconut oil: Mixing coconut oil with the chocolate helps it melt smoothly and makes the chocolate layer easier to spread. You can omit it if you want to, but I wouldn’t recommend swapping this for another oil.

How to Make It

Step One: Blend the Cottage Cheese Base

In a high-powered blender or food processor, combine the cottage cheese, honey, and vanilla extract. Blend until smooth and creamy.

Tip: Blending the cottage cheese removes any lumps and creates a texture similar to yogurt or cheesecake batter.

Step Two: Prepare the Strawberries

Line a small baking sheet or tray with parchment paper. Arrange the sliced strawberries in a single layer, placing them close together to form the base of the bark.

Tip: The closer the strawberries are, the easier it will be to cut the bark into solid pieces without gaps.

Step Three: Pour the Cottage Cheese Layer

Pour the blended cottage cheese mixture over the strawberries. Use a spatula or the back of a spoon to gently spread it into an even layer, making sure all the strawberries are covered.

Step Four: Add the Peanut Butter

If your peanut butter is thick, melt it in the microwave in 20-second intervals until pourable. Drizzle the peanut butter over the cottage cheese layer and use the back of a spoon or spatula to spread it evenly.

Step Five: Melt and Add the Chocolate

In a microwave-safe bowl, combine the dark chocolate and coconut oil. Microwave in 20-second intervals, stirring between each, until fully melted and smooth. Drizzle the melted chocolate over the peanut butter layer and gently spread it into an even layer.

Tip: The coconut oil helps prevent the chocolate from cracking when you slice the bark later.

Step Six: Freeze

Place the tray in the freezer for at least 2–3 hours, or until the bark is fully set.

Once frozen, remove the bark from the freezer and use a sharp knife to slice or break it into pieces. Store the pieces in an airtight container in the freezer for up to 1 month.

Want to switch things up or customize this frozen cottage cheese bark? Here are some simple ways to make it your own:

  • Swap the peanut butter for almond butter, cashew butter, or sunflower seed butter if you need a nut-free option. Each one will give the bark a slightly different flavor.
  • Try other fruits! While strawberries work great, you can also use blueberries, raspberries, banana slices, or a mix of fruits for variety.
  • Make it sweeter (or less sweet) by adjusting the amount of honey to suit your taste. You can also use maple syrup or agave nectar if you prefer a plant-based sweetener.

    I absolutely LOVE this snack recipe. It’s super easy to make and I actually make it like once a week now because I never feel guilty for eating it often because I know what’s in there and it’s healthy! I had run out of cottage cheese so I had mixed plain greek yogurt the last time and still turned out awesome. My husband even loves this snack and I’ve even shared with others and they love it!

    Oh my goodness, new favorite snack ever!! This is a go to, I love having a snack ready to eat for those days where I’m to busy to put something together, this is easy to make, you cam make a big batch and it tastes absolutely marvelous. Crunchy, salty, sweet, a little creamy, just perfect!
