How To Make It

Step One: Make the Teriyaki Sauce
In a small saucepan over medium heat, combine the soy sauce (or tamari), honey, rice vinegar, sesame oil, garlic, and ginger. Bring the mixture to a gentle simmer, then stir in the cornstarch slurry. Let it simmer for 1–2 minutes, or until the sauce thickens slightly. Remove from heat and set aside to cool.

Tip: Letting the sauce cool before adding it to the raw salmon helps it stick better and prevents any cooking from happening prematurely.

Step Two: Marinate the Salmon
Once the sauce has cooled for about 5 minutes, place the cubed salmon into a large bowl and pour the teriyaki sauce over it. Gently toss to coat all pieces evenly. Let it marinate for up to 15 minutes for maximum flavor.

Step Three: Cook the Salmon (Air Fryer Option)
Preheat your air fryer to 400°F. Once heated, place the marinated salmon pieces in a single layer in the air fryer basket. Air fry for 6 to 8 minutes, shaking halfway through, until golden brown and cooked through.

Step Three: Cook the Salmon (Stovetop Option)
If using the stovetop, lightly season the salmon bites with salt and pepper. Heat 1 tablespoon of olive oil in a large sauté pan over medium heat. Add the salmon cubes in a single layer and cook for about 3 minutes per side, until seared and cooked through. Reduce the heat to medium-low and pour the teriyaki sauce over the salmon. Let it simmer for 2–3 more minutes to finish cooking and coat the salmon.

Step Four: Garnish and Serve

Tips, Variations + Substitutions

  • Want it gluten-free? Use tamari instead of soy sauce to keep the recipe gluten-free. Pair it with brown rice, quinoa, or gluten-free noodle bowls to make the full meal celiac-friendly.
  • Looking to lower sodium? Choose a reduced-sodium soy sauce or tamari to cut back on salt while still enjoying all the flavor. You can also skip the added salt on the stovetop version and let the sauce do the work.

Ingredients

  • 1 lb skinless salmon filet cut into 2-inch cubes
  • 1 tbsp olive oil (stove top version only)
  • salt and pepper (stove top version only)

Teriyaki Sauce:

  • 2 tbsp low sodium soy sauce or tamari
  • 1 tbsp honey
  • 1 tbsp rice vinegar unseasoned
  • 1 tsp sesame oil
  • 2 cloves garlic minced
  • ½ tsp fresh ginger grated; or ¼ tsp ground ginger
  • 1 tsp cornstarch mixed with 1 tbsp water

Optional garnish

  • green onion sliced

Instructions

Make the Teriyaki Sauce:

  • In a small sauce pan over medium heat, combine the sauce ingredients except for the cornstarch and water. Bring to a simmer. Stir in the cornstarch + water slurry mixture and simmer for 1-2 minutes until thickened. Remove from heat and set aside.

Air Fryer Instructions:

  • Transfer teriyaki sauce to a bowl to cool for a few minutes. Once it has cooled off, approximately 5 minutes, marinate the salmon cubes in the sauce. Allow to marinate for up to 15 minutes for the most flavor.
  • Preheat air fryer to 400 degrees Fahrenheit. Once preheated, place the marinated salmon pieces in a single layer in the air fryer basket. Air fry for 6 to 8 minutes, shaking halfway through, until golden brown and cooked through.
  • Garnish with sesame seeds and sliced green onion.

Stovetop Instructions:

  • Lightly season the salmon bites with salt and pepper.
  • Heat 1 tbsp olive oil in a large sauté pan over medium heat. Place the salmon bites in the pan in a single layer and sear on one side, about 3 minutes. Flip salmon pieces over and sear for about 3 minutes.
  • Reduce heat to medium low and pour teriyaki sauce over salmon bites. Allow to simmer for another 2-3 minutes or until salmon is cooked through.
  • Garnish with sesame seeds and sliced green onion.
